Tacchino alla canzanese

Core dish of Teramo gastronomy, with a pleasant and fine taste. Thanks to its food qualities with a high nutritional value and a long-life preservation, it has received the award of being chosen between the supplies of the first expedition to the moon leaded by Neil Armstrong.

Preparation
Remove the turkey entrails and bones completely, keeping the skin and putting the bones aside. Dip the meat in cold water for two hours at least.
Place the boneless meat on a surface, cut a clove of garlic and pass it on the meat and then add salt and pepper. Tie the turkey with a kitchen string and put it in a pan with the laurel, garlic, pepper in grains and pounded bones, pour about 3 liters of water in the pan but do not covering the turkey completely.
Cook in a preheated oven at 200 ° C for about an hour than, reduce the temperature to 180 ° C and cook it for another 3 hours, turning the turkey occasionally. Once removed from the oven, cut off the kitchen strings, filter the stock and degrease it. Let everything cool to room temperature and then place it in the fridge waiting for the broth becoming jelly. It is recommendable to prepare the turkey a day before and then serve it cold cutting it into slices adding the jelly. Enjoy your meal!.
